Mediterranean Sardine Dip

This recipe is Mediterranean, and it’s my adaptation of it. I can’t locate exactly which country it comes from, but it’s very easy to make.

You will need:
1 peeled cucumber, sliced thinly
can of sardines (preferably piquant)
2 tablespoons lemon juice
1 clove garlic
a little olive oil
salt

Salt the sliced cucumbers and leave the slices separately on a plate, or on a kitchen towel, to sweat out most of the liquid, for 1/2 hour, turn the slices over and salt the other side and leave for another 1/2 hour. Rinse cucumbers when ready.

Whizz/blend all the other ingredients with the cucumber slices. You should have a thick, spready dip ideal with bits of toast.
